The secret of the afternoon café
Tucked away behind the 2nd-floor home collection area at Ginza Maison Hermès is a café. Customers are often surprised to stumble across the café, where diners can partake in fresh herbal teas, coffee, wine, and seasonal refreshments served on Hermès tableware. The menu prominently features dishes made with vegetables and herbs grown without pesticides or chemicals on a farm operated by Hermès especially for the café. For example, you might be able to order ratatouille when eggplants and zucchinis are in season.
In an effort to pursue sustainability through food, tea leaves and other food waste produced by the café are turned into fertilizer and returned to the fields. Oranges are squeezed into fresh orange juice, after which the peels are saved to make a spirit—which is of course also served here at the café! Speaking of beverages, every drink comes with a Kelly bag–shaped chocolate—a favourite among our customers.
